Understanding Celiac Disease: Awareness in Our Community

As a community, supporting one another’s health and well-being is essential. One condition that is often misunderstood is celiac disease.

Celiac disease is an autoimmune disorder, not simply a food allergy or a dietary preference. In autoimmune conditions, the immune system mistakenly attacks the body’s own tissues. For individuals with celiac disease, consuming gluten, a protein found in wheat, barley, and rye, triggers an immune response that damages the small intestine.

Over time, this damage interferes with the body’s ability to absorb nutrients and can lead to fatigue, digestive issues, anemia, bone loss, and other long-term health complications. Some individuals may also experience headaches, joint pain, skin rashes, or difficulty concentrating. Because symptoms vary widely, celiac disease is sometimes misdiagnosed or diagnosed later in life.

The only treatment is a strict, lifelong gluten-free diet. Even small amounts of gluten can cause harm, which means individuals must carefully avoid foods containing wheat, barley, rye, and ingredients derived from them. Cross-contact during food preparation can also pose a serious risk. In shared kitchens and dining spaces, this makes awareness and care especially important. Reading ingredient labels, using separate utensils when possible, and cleaning shared surfaces thoroughly can help prevent accidental exposure.

Fortunately, our community offers supportive resources. In Fort Collins, many restaurants provide gluten-free menu options and clearly label safe choices. At Colorado State University (CSU), dining services prioritize ingredient transparency. Each food item includes a QR code that residents can scan to view detailed ingredient information, making it easier to identify foods containing gluten and make informed decisions. Dining staff are also available to answer questions and help students navigate menu options safely.

Raising awareness about celiac disease helps us build a more inclusive and thoughtful community. Whether planning events, sharing meals, or simply dining together, understanding dietary needs allows us to better support those living with autoimmune conditions. Small considerations, such as checking ingredients, preventing cross-contact, or offering gluten-free options, can make a meaningful difference in someone’s daily life. By staying informed and respectful of one another’s health needs, we strengthen the sense of care and belonging within our community.

If you plan to attend a program hosted by our Community Coordinators and have dietary restrictions, please connect with your area CC ahead of time. We want our events to be inclusive and welcoming, and we will do our best to accommodate dietary needs whenever possible.
